Karoo Edge 225 Large Prep Knife

The Karoo Edge 225 is a wide, long-edge knife built for confident board work and smooth slicing. With a 225 mm blade length and 60 mm blade height, it gives you strong knuckle clearance and a planted feel on the cutting surface, while still staying controllable in the hand.

The blade has a rugged textured finish across the upper section, with a cleaner working bevel lower down where it does the cutting. That textured look hides day to day marks better than a full polish finish and gives the knife a serious working character, without claiming any specific manufacturing process.

The handle is shaped for comfort and control, pinned for strength, and finished with a standout mosaic pin detail.

Care and protection

If the steel is non-stainless, wipe clean and dry after use. For storage and moisture protection, apply a light coat of SharpWax, made to help protect non-stainless steels from fingerprints and humidity.
